How do I test the fat content of milk, cream or cheese?

The Gerber method is the standard routine test. What happens is the sample is mixed with sulphuric acid and amyl alcohol in a butyrometer. It's then spun in a centrifuge. The fat percentage is now read straight off the graduated stem. There is different butyrometers for covering milk, cream, cheese and butter. The Mojonnier method gives a reference gravimetric result. What is the phosphatase (ALP) test? And how does it confirm pasteurisation?

Alkaline phosphatase (ALP) is an enzyme that’s naturally present in raw milk. It is destroyed by correct pasteurisation. A negative ALP result confirms that the milk was properly pasteurised. Because of this it's a key food-safety check for dairies. Rapid tests give a result in minutes. Ocon Chemicals supplies ALP tests. What is the resazurin test for milk quality?

The resazurin test is a very quick dye-reduction test. It's for the bacterial quality and hygiene of raw milk. Resazurin is added. As bacteria metabolise, the dye changes from blue through pink to colourless. The faster and further the change means the higher the bacterial load. It's used a lot for rapid milk grading. How do I test for antibiotic residues in milk?

Antibiotic (beta-lactam) residues must be screened before milk goes into the supply chain.
